Sambar



Ingredients :
1/2 cup thuvaram parupu
1 small tomato, turmeric powder
1 green chilly, 2 pieces of garlic
Cook the above in a cooker for one whistle.


Ingredients to make sambar powder :
Fry all the ingredients below in a heated pan and make a powder.
2 spoons of kadala paruppu
6 dry chillies
2 spoons of malli seeds
1 spoon seeragam
1/4 spoon vendhayam

  1. Take a small ball of tamarind (extract using water) and keep aside.
  2. Fry some vegetables you want to add in the sambar with some oil and keep it aside.
  3. Open the cooker and add the fried vegetables, and the sambar powder prepared earlier, add some hot water and allow to boil in low fire. I used brinjal.
  4. Add the tamarind extract and allow it to boil again.
  5. Place another tava, add some oil, kadugu, karuvapillai, and perungayam thool and fry them lightly and add them to the sambar.
