Dum Biriyani




Ingredients :
One full chicken
ginger, garlic
tomato, onions, mint leaves
coriander, lemon, bay leaf, cloves
butter/ghee/oil
biriyani paste (Patak's)
basmati rice
chilly, tumeric powder, salt

  1. Heat ghee(for 1kg rice, use 1/4 kg of ghee)
  2. Add bay leaf and cloves
  3. Add onions, mint leaves, ginger and garlic paste.
  4. Add the tomatoes, biriyani paste (1big spoon for 1kg rice)
  5. Add the chilly powder, tumeric powder and salt to taste.
  6. Mix them all under high heat.
  7. Then add some lemon juice and mix again.
  8. Add the chicken pieces to the gravy.
  9. Add the rice (washed) to the above and add water.
  10. Water should be double the amount of rice.
  11. Mix well, close with a lid. Allow it to boil for 5mins and then stir again.
  12. Pre-heat a thava and place the biriyani container on it and place a heavy container with boiling water on top of the biriyani container and leave it for a while until the rice cooks. or Place it inside a pre-heated oven for 10mins.
  13. Serve hot.
